Kettle Corn with a Kick ( paleo / vegan/ gluten free)
- 4 tbsp. melted Purly Grown Virgin Coconut Oil
- ½ cup popcorn kernels
- 1 tbsp. organic coconut sugar or 2-3 powdered stevia packets (Truvia)
- 1 tsp. salt
- pinch of cayenne (optional)
Step 1: Heat 2 tbsp. of coconut oil over medium heat in a large stock pot with a lid.
Step 2: Add kernels, cover with a lid, and cook. Shake the pot occasionally to prevent burning.
Step 3: Continue to cook until popping slows.
Step 4: Remove from heat and add the remaining melted coconut oil, sugar, salt and optional pinch of cayenne.
Step 5: Put the lid back on and shake vigorously until popcorn is well coated.
Krunchy Kale Chips (vegan / paleo / gluten free)
- 1 bunch of kale, washed, dried, and stems removed
- 1 tbsp. melted Purly Grown Virgin Coconut Oil
- 1/4 tsp. garlic powder
- 1/8 tsp Salt
- pepper to taste
Step 1: Preheat oven to 300F.
Step 2: Tear the kale into smaller pieces and add it into a large mixing bowl
Step 3: Pour the melted coconut oil over the kale and massage until all the leaves are covered.
Step 4: Sprinkle on the garlic, salt, and pepper to taste. Toss to combine.
Step 5: Spread the Kale leaves onto a baking sheet.
Step 6: Place into the oven and bake for about 15 minutes and then take out and toss.
Step 7: Place back in the oven for about 8-10 minutes (until crispy)
Step 8: Allow the chips to fully cool. Enjoy!
The Creamiest Coconut Creamer (paleo / vegan / gluten free)
- 3/4 cup Purly Grown Virgin Coconut Oil (soft but not melted)
- 1/4 cup Raw Honey (optional)
- 1 tsp. organic cinnamon powder
- 1 tsp. vanilla extract
- 1 tbsp. organic cacao powder (optional)
Step 1: Add all of the ingredients into a bowl and whisk until well combined.
Step 2: Store in a glass jar with a tight-fitting lid
Step 3: Add 2 tbsp. of coconut oil coffee creamer to your favorite cup of hot coffee
Step 4: Using a blender, blend the coffee + creamer on high for about 8 seconds
Step 5: Pour into a mug and enjoy
*It may be stored at room temperature or in the refrigerator
Strawberry Dragon Fruit Popsicles
- 1 dragon fruit
- 1/2 cup strawberries
- 2 bananas
- 2 Tbsp . honey divided (or maple syrup)
- 1 Tbsp. Purly Grown Virgin Coconut Oil (soft but not melted)
- 1/2 tsp . vanilla extract
Step 1. Add dragon fruit, strawberries, 1 banana, 1 Tbsp. honey, and 1 Tbsp. Purly Grown Virgin Coconut Oil (soft but not melted) to blender or food processor. Blend until smooth.
Step 2. Fill popsicles molds 1/3 of the way with dragon fruit mixture. Insert popsicle sticks and place the molds in freezer.
Step 3. Pour the rest of the dragon fruit mixture into a bowl. Place bowl in fridge.
Step 4. Add 1 banana, 1 Tbsp. honey, 1 Tbsp. Purly Grown Virgin Coconut Oil (soft but not melted), and vanilla extract to blender or food processor. Pour the banana mixture into a bowl. Place bowl in fridge.
Step 5. After 45 minutes, add banana mixture to popsicle molds. Place molds back in freezer for 30 minutes.
Step 6. Add the remaining dragon fruit mixture to popsicle molds. Let the popsicles freeze fully (approx 5 hours).
Step 7. Remove the popsicles from molds by running molds under hot water for a few seconds.
